Ingredients

1 1/2 c almond flour -i use mama's almond blend.
1/2 c coconut, flakes -i used the sweet, and may be little more.
1/2 c sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 c silvered almonds ,chopped fine
2 large eggs
1 c mashed bananas apx 3 bananas
1/2 tsp almond extract
1/4-1/2 c grape oil or your choice of oil
3/4 tsp guar gum -if not using flour with it already in it.

Margie's Notes:

Just had to have the taste of some coconut...and had plenty of ripe banana's on hand.
And used my Almond flour mix.

 

Directions

In a large bowl, add eggs mix some add your sugar,and oil. and beat until thoroughly blended.
then add the mashed bananas and almond extract.

In another bowl put all your dry ingredients,mix well.
Now you put your wet ingredients into the dry,
and mix well.
sometimes I add a handful of dried cranberries for a little crunch .

Put in your oiled muffin pan, I use silicone muffin cups.
Bake for apx 30 minutes at 350F, test with tooth-pick if comes out clean there cone.

I sprinkled a little coconut on the top of my muffins before putting them in the oven. YUM-O ..

Margie do you spray or oil you silicone cups? I want to make this recipe.

no you don't need to spray the silicone, since I started using them I don't want to ever use anything else.

I have edited this as I forgot I had added some Guar gum .
and this time I added a handful of dried cranberries,We have 4 left so Monday will be another some kind of muffin day.
