COCONUT BANANA ALMOND MUFFINS

|1 1/2 c||almond flour -i use mama's almond blend.|
|1/2 c||coconut, flakes -i used the sweet, and may be little more.|
|1 1/2 tsp||baking powder|
|1/2 tsp||baking soda|
|1/2 c||silvered almonds ,chopped fine|
|1 c||mashed bananas apx 3 bananas|
|1/2 tsp||almond extract|
|1/4-1/2 c||grape oil or your choice of oil|
|3/4 tsp||guar gum -if not using flour with it already in it.|

DirectionsIn a large bowl, add eggs mix some add your sugar,and oil. and beat until thoroughly blended.
then add the mashed bananas and almond extract.In another bowl put all your dry ingredients,mix well.
Now you put your wet ingredients into the dry,
and mix well.
sometimes I add a handful of dried cranberries for a little crunch .Put in your oiled muffin pan, I use silicone muffin cups.
Bake for apx 30 minutes at 350F, test with tooth-pick if comes out clean there cone.I sprinkled a little coconut on the top of my muffins before putting them in the oven. YUM-O ..
