Ingredients

1 1/2 c
all purpose flour
1 tsp
ground cinnamon
1/3 c
brown sugar, lightly packed
2/3 c
white sugar
2 large
eggs
1/2 c
butter softened
1 1/2 tsp
vanilla extract
1 3/4 tsp
baking powder
1/2 c
milk

apples peeled and chopped

Directions Step-By-Step

Preheat oven to 350 degrees
Grease and flour 12 muffin cup tin or a 9 x 5 loaf pan or a bundt tin

Mix brown sugar and cinnamon together in a bowl and set aside
I usually peel the apples and put into the food processor and pulse till chopped
Beat white sugar and butter together until smooth and creamy

Beat in eggs 1 at a time and add vanilla
Combine flour and baking powder together in another bowl and stir into creamed butter mixture

Mix milk into batter until smooth
Pour half the batter into muffin cups
Add half the apples and half the cinnamon mixture
Lightly pat the apple and cinnamon mixture into the batter

Pour the remaining batter over the apple layer
Top with remaining apples and add more brown sugar mixture
Bake for 30 - 40 minutes
