Easy, moist cranberry-orange muffins

I love to make these for Sunday morning brunches. They are healthy and so moist and go well w/ just about any breakfast. Or have one as a snack!!

Ingredients

1-1/2 c
all purpose flour
1/2 c
whole wheat flour
1 c
sugar
3 tsp
baking powder
1/2 c
low-sugar orang juice
1/2 c
fat-free milk
1 large
egg, beaten
1-1/2 c
fresh cranberries
2 Tbsp
orange peel

Directions Step-By-Step

Heat oven at 400. Spray muffin tins w/ cooking spray. In lg bowl, combine all ingredients. Mix well.

Fill muffin cups 3/4 full. If making lg muffins check w/ a toothpick inserted in center of muffin at 18 mins. If using small muffin cups, check at about 12 mins. You may need a little longer for either size.
