This is a great appetizer in the summer when tomatoes are at their peak!

Ingredients

1/3 c
olive oil
1
juice of 1 lemon
4
plum tomatoes
3 clove
garlic
1 tsp
garlic powder
1 tsp
kosher salt
1 tsp
fresh ground black pepper
1
loaf 2 inch diameter crusty french bread sliced in 1/2 inch slices on the diagonal
24 large
fresh basil leaves
1 lb
fresh mozzarella

Step-By-Step

1In a large mixing bowl whisk together garlic, seasoned salt, black pepper, lemon juice and olive oil.
2Gently fold in tomatoes until well coated.
3Chill in refrigerator for 30 minutes.
4Remove tomatoes from olive oil mixture and set aside.
5Brush tops of bread slices with olive oil mixture that tomatoes were marinating in.
6Place bread on a cookie sheet and bake in oven for about 5 minutes. Until just toasted.
7Place 1 large leaf of Basil on each slice of bread and top with a slice of tomato.
8Scoop mozzarella cheese with a half round tablespoon size measuring spoon and top tomato slices with mozzarella cheese.
