MY DAUGHTER HAD MENTIOND TO ME THE OTHER DAY HOW SHE USES AVOCADO INSTEAD OF MAYO FOR HER EGG SALAD. I WAS HAVN A FRIEND OVER TODAY FOR SOME GOSSIP N WINE N DECIDED TO MAKE SOME DEVILED EGGS N HAD AN AVOCADO SOOOOOOO :)

mustard (i used hot mustard)

avocado, split n scooped out
1/2 tsp
parsley, finely choppd
1 tsp
lime juice
salt n pepper to taste
paprika, for garnish

1SLICE EGGS LEGNTH WAYS N PUT YOLK IN A BOWL ...PUT WHITES ASIDE. ADD SCOOPED OUT AVOCADO, MAYO, MUSTARD, PARSLEY, LIME JUICE N S n P. BLEND TILL CREAMY.

2SPOON THIS MIXTURE INTO A SMALL PLASTIC BAG WITH DECORATOR PASTRY TIP PUSHD INTO CORNER.
