Fran's Story

One of my "go to" recipes for covered dish dinners or a quick, light meal at home.

Adjust amounts for your purpose. I use about 2 cups of uncooked pasta (which, of course, you cook before using!) for a large bowl of salad. It's all a matter of what you like since it's your kitchen. =^..^=

Blue Ribbon Recipe

Notes from the Test Kitchen:
Fresh, crispy and creamy! Imagine all the yumminess of chicken Caesar salad but with the added goodness of pasta, bacon and tomatoes.

Ingredients

some
bow tie pasta; cooked, rinsed with cool water, drained
some
caesar salad dressing
some
grilled chicken chunks or strips, grilled at home or packaged
some
romaine lettuce leaves
some
tomato chunks
some
bacon bits
some
croutons
some
parmesan cheese, shredded

Directions Step-By-Step

1
Cook the pasta until done (to your taste). Rinse with cool water and drain well. While that is cooking...
2
Grill chicken strips, unless you bought them precooked at the store. Leave in strips or cut into chunks.
3
Mix the drained pasta with some of the caesar dressing. Add the chicken and more dressing, if needed. (If you're taking this to a covered dish dinner later, cover & refrigerate until ready to leave.)
4
Right before serving, add the romaine lettuce, tomatoes, bacon bits, croutons, and shredded parmesan cheese. Toss well, adding more dressing as needed. (Or leave the bottle beside the salad bowl.) Serve immediately.

Victoria, I was a little worried about the lettuce, but I totally forgot to think about the croutons. I'll know to just pack up the pasta & chicken for my lunch the next time I fix this. Thanks, again, for your kind words. Have a great week! =^..^=

Hi Fran, the croutons and the lettuce didn't fair too well for breakfast but the pasta and chicken were still fabulous. This is a great dish and will be in the line up for a quick, delicious go to meal! Thanks again and I can attest to the fact that the blue ribbon was well deserved!

Victoria, you made my day with your Seal of Approval & your kind words. I'm not sure I ever had any left over so I hope it's OK in the morning. I usually make this to take somewhere else and just leave what's left behind. Usually, it's not too much! LOL Thanks for posting! =^..^=
