Makes perfect sense to me. I always use the thermometer at he end. If it's not
at the right temp. I put the meat back in the oven to a temperature I'm wanting.

In thi video two different types of thermometers were used, but you would use one or the other. One stays in the meat, while it's cooking in the oven. The other thermometer is used once the cook believes the cooking time of the pork is complete, you use the instant read to make sure that the meat is the correct temperature. Both thermometers do the same thing but you use just one thermometer. Hope this helps you RobertDelisle!
