INGREDIENTS
3 Tablespoons olive oil (can you avocado)
1 large yellow onion (diced)
4 cloves garlic (pressed or chopped)
1 pound Italian sausage (cut into small pieces)
3 large Russet potatoes (diced)
4 cups chicken broth (1 box, or, use home made)
1 cup water
1 Tablespoon dried basil
1 teaspoon dried fennel
2 cups kale (chopped into small pieces)
1 can coconut milk (can use cream or half-n-half)
1 teaspoon red pepper flakes (can use more to taste)
salt and pepper to your taste
