INGREDIENTS

2 T olive oil

1 medium onion, chopped
•
2 cloves garlic, minced
•
1/2 to 1 small serrano pepper, diced (optional - take out seeds for less heat) - I used extra chile limon spice

2 cups cooked rice (I used Minute Brown Rice)
•
8 cups chicken broth
•
14 oz can diced tomatoes (not drained)
•
1 sm can diced green chiles (not drained)
•
1/3 c lime juice
•
14 oz can black beans, rinsed and drained
•
1 can corn (or 1 cup frozen) - optional (I didn't use this)
•
12.5 oz can chicken breast (or 2 cups left over chicken, or 2 raw chicken breasts cubed)
•
1 tsp ground cumin
•
1 tsp dried leaf oregano
•
1 tsp dried thyme
•
1/4 tsp cayenne pepper (or more if you like)
•
Any other seasoning you’d like to add (I also used Mrs. Dash’s Lime Fiesta seasoning)

1/4 cup chopped cilantro
