Zucchini Summer Casserole

INGREDIENTS
5 cups sliced uncooked zucchini
1 large onion, diced
1 cup Panko crumbs, divided use
2 large eggs, higher omega-3 if available, beaten
2 large egg whites (1/4 cup egg substitute can be used instead), beaten
1 cup fat free half and half (lowfat milk can be substituted)
1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
3/4 teaspoon black pepper
Pinch or two cayenne pepper
1/2 teaspoon salt (optional)
1 1/2 cups shredded reduced fat sharp cheddar (or similar)
