Zucchini Fritters:
1 small onion, thinly sliced
1 cup yellow squash, julienned
1 cup zucchini, julienned
1-1/4 cups all-purpose flour
5 oz white cheddar cheese, shredded
1/2 tsp salt
1 tsp black pepper
1/2 tsp garlic powder
2 large eggs
1 cup cold beer
Dipping Sauce:
24 garlic cloves, peeled
1 Tbsp olive oil
1-1/2 cups mayonnaise
4 Tbsp lemon juice
1 tsp black pepper
1/4 tsp salt
1/4 cup fresh chives, chopped
