INGREDIENTS
2 cups grated zucchini, (liquids squeezed out)
1 cup cottage cheese, (drained)
2 eggs
1/4 cup breadcrumbs ((or almond flour))
1/3 cup grated pecorino cheese
2 scallions, (fine chop)
1 tsp Italian herb blend
salt and pepper (to taste)
Optional Dip: Lazy Tzatziki
