Zucchini Bread

INGREDIENTS
•1 cup sorghum flour
•3/4 tsp. xanthan gum (this provides binding and structure to gluten-free baked goods)
•1/4 tsp. salt
•3/4 tsp. baking soda
•1/4 cup unsweetened cocoa powder (make sure it says gluten-free on the container)
•1/4 cup sugar
•2 Tbsp. firmly-packed brown sugar
•1 large egg
•1/4 cup canola oil
•1/2 tsp. vanilla extract
•1/4 cup sour cream
•1-1/2 cups shredded, unpeeled zucchini
•1/3 cup gluten-free semisweet chocolate chips----------- For this recipe, we're using sorghum flour in place of wheat flour. But you can use 1 cup of a gluten-free flour mix instead. There are lots of good ones to choose from. Just make sure that
