2 teaspoons fresh lemon juice

1 large or 2 small zucchinis, sliced into ¼ inch thick rounds

1 tablespoon plus 1 teaspoon olive oil
•
1 tsp roasted minced garlic, fresh garlic works as well
•
½ cup ricotta cheese
•
½ cup (about 1 ounce) grated Parmesan cheese
•
¼ cup (1 ounce) shredded mozzarella
•
1 tsp dried basil
•
1 egg yolk for brushing
