Zucchini and Cheese Soup

INGREDIENTS
1 tablespoon butter (or oil)
1 cup onion, diced
2 cloves garlic, chopped
1/2 teaspoon thyme (optional)
3 cups chicken broth (or vegetable broth)
2 pounds zucchini, sliced
1 pound russet potatoes, peeled and sliced
1 pinch nutmeg (optional)
1/2 cup heavy cream (or milk)
2 cups sharp/old/aged cheddar cheese, shredded
salt and pepper to taste
