1 red onion, thinly sliced
3 cloves garlic, minced
1/2 cup dry white wine
1/2 cup vegetable stock or broth
1 lemon, zest
4 small yellow squash, cut into 1/4 inch slices
2 medium zucchini, cut into 1/4 inch slices
1/2 cup crumbled feta cheese
fresh oregano leaves from one large sprig, minced
crushed red pepper flakes
salt and pepper, to taste
