INGREDIENTS
2 lb boneless pork loin, cut into 1 1/2-inch cubes
1 medium butternut squash (1 1/4 to 1 1/2 lb), peeled, seeded and cut into 1 1/2-inch cubes (about 4 cups)
6 small red potatoes, cut into quarters
4 medium carrots, cut into 1/2-inch slices (about 2 cups)
1 medium onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
2 dried bay leaves
2 teaspoons rubbed sage
1 teaspoon salt
1/2 teaspoon pepper
1 can (28 oz) crushed tomatoes, undrained
Chopped fresh sage leaves or Italian (flat-leaf) parsley, if desired
