Ingredients
For the Dough
2 1/2 cups all-purpose flour
1 teaspoon salt
2 teaspoons granulated sugar
16 tablespoons (2 sticks) cold unsalted butter, cut into 1/2-inch dices
3 to 4 tablespoons ice water
For the Filling:
4 Granny Smith apples, peeled, cored and cut into 1/4-inch thick slices
2 Pink Ladies or Honeycrisp apples, peeled, cored and cut into 1/4-inch thick slices
2 Fuji apples, peeled, cored and cut into 1/4-inch thick slices
2/3 cup brown sugar, firmly packed
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
4 teaspoons cornstarch
1 tablespoon lemon juice
2 tablespoons cold unsalted butter, cut into 1/2-inch pieces
1 egg white, beaten with 1 teaspoon water
2 teaspoons granulated sugar
