Wholesome Apple Crisp

INGREDIENTS
1 tablespoon unsalted butter, softened
6 medium (about 2-½ to 3  lbs) Granny Smith and Gala apples
2 tablespoons cornstarch
½ teaspoon ground cinnamon
¼ cup pure maple syrup
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
1 cup (130 grams) whole wheat flour or spelt flour
6 tablespoons (85 grams) unsalted butter, chilled and cut into ½” pieces
½ teaspoon (2 grams) coarse kosher salt (see note)
½ cup (40 grams) old fashioned oats
½ cup (60 grams) pecans, finely chopped 
⅓ cup (110 grams) pure maple syrup
