The dough needs to rest for at least two hours in the fridge before baking. When the cookies come out of the oven they will be brown but still a little underbaked on top. INGREDIENTS
2 cups old fashioned oats
1/4 cup water
1 1/4 cups (about 6 1/4 ounces) all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
16 tablespoons (2 sticks) unsalted butter
1/2 cup (3 1/2 ounces) sugar
3/4 cup (about 6 ounces) light brown sugar
1 egg
1 cup dried cranberries
1 cup chopped white chocolate or white chocolate chips, put in the freezer for 20 minutes
