Ingredients: White sauce:; 3 Tbsp butter; 1 small onion (finely diced); 3 Tbsp all purpose flour; 1 cup chicken broth `; 1 cup heavy cream or half and half; 1 8-oz sour cream; Filling:; 3 cups chopped rotisserie chicken; 1 4 oz can diced green chiles (well drained); 1/2 tsp salt; 1/2 tsp ground cumin; 1/2 tsp lemon pepper; 3 cups shredded pepper jack cheese (divided ); 8 (8 inch) white corn tortillas; chopped cilantro, jalapeno, olives for garnishing (optional); 2 1/2 cups Monterey jack cheese (divided)
