INGREDIENTS

1 14.5 ounce can of white beans, drained but not rinsed

2 tablespoons finely chopped red onion
•
2 tablespoons finely chopped pickled pimento
•
1/2 fresh lemon, squeezed
•
2 teaspoons red or white wine vinegar
•
1 tablespoon virgin olive oil or grapeseed oil
•
1 teaspoon of a combination of herbs of choice such as chopped parsley, rosemany, tarragon, thyme, or you can use 1/2 teaspoon dry herbs de province (crumbled)
•
Salt and pepper to taste.
•
Parsley to garnish.
