White Bean and Kale Soup Recipe | The Mediterranean Dish

INGREDIENTS
Extra virgin olive oil
1 lb boneless chicken (cut into small bites)
Kosher salt and black pepper
2 medium yellow onions (chopped)
3 garlic cloves (minced)
1/2 tsp red pepper flakes (more for later)
3/4 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp dry rosemary
2 15- oz cans white beans (drained and rinsed, smash contents of 1 can for texture)
8 cups low-sodium broth (chicken or vegetable broth will work here)
8 oz kale leaves (cut into 1/2 inch strips (no thick stems))
2 inch piece Parmesan cheese rind
1 to 2 tsp fresh lemon juice
