INGREDIENTS
Makes 6 -- 1-1/2 cup servings
1 teaspoon olive oil
1 cup frozen diced onion (or you can use 1 medium fresh onion, diced)
3 teaspoons minced garlic
1 (28 ounce) can petite diced tomatoes (NOT drained)
1 (15 ounce) can tomato sauce
1 tablespoon Italian seasoning
4 cups beef broth (I used low sodium)
1 (20 ounce) package frozen Italian meatballs, thawed
20 ounces fresh three-cheese tortellini pasta
1/2 cup shredded Parmesan cheese, plus additional for garnish
Salt and pepper, to taste
Chopped fresh basil, for garnish
