Ingredients: 6 tablespoons (3 ounces) reduced fat cream cheese, softened; 1/4 teaspoon mint extract; food coloring (optional) - i used a few drops of yellow to get a very soft butter color; 4 to 4 1/2 cups confectioners sugar; about 1/4 cup superfine or granulated sugar
