"Watermelon puree, chocolate chips and lime sherbet come together to create our whimsical Watermelon Ice Pops. We pureed watermelon with a little sugar for the fruit layer, straining the puree prior to freezing to remove any stringy fiber. The chocolate chip “seeds” sank to the bottom when the puree wasn’t partially frozen, so we waited until it was. After adding the chocolate chips, we divided the puree among small cups and froze it until it was firm. To mimic the green rind, we thought that lime sherbet was perfect for the job...."
