INGREDIENTS
1 tbsp. olive oil
3 carrots, chopped
3 garlic cloves, finely chopped
2 celery stalks, chopped
1 yellow onion, chopped
3 tbsp. tomato paste
2 tsp. fresh thyme, chopped
1 tsp. cumin
1 tsp. paprika
1 tsp. kosher salt
1/2 tsp. black pepper
2 qt. vegetable broth
1 lb. brown lentils, rinsed and picked through (about 2 1/2 cups)
1/4 c. fresh flat-leaf parsley, chopped, plus more for serving
1 tbsp. red wine vinegar
