1/2 cup granulated sugar
8 tablespoons (1 stick) salted butter, cut into even pieces
4 tablespoons (1/2 stick) unsalted butter
3 pounds (about 9 cups) frozen peaches, thawed in the refrigerator overnight
1½ cups light brown sugar
1 tablespoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground cardamom
1/2 teaspoon freshly ground black pepper
