INGREDIENTS

1-2 lbs ground beef

1-2 lbs beef chuck
•
2 poblano peppers, diced
•
1 onion, diced
•
1 jalapeño, minced
•
2 cloves garlic, minced
•
3 oz tomato paste
•
2-3 chipotle peppers in Adobo (or more for spicier)
•
15 oz can diced tomatoes
•
16 oz can kidney beans (drained)
•
4.5 oz diced green chiles
•
1 packet chili seasoning (or 2 tbsp each of chili powder & cumin, 2 tsp each of garlic powder & onion powder, and 1 tsp salt)
•
1 winter beer of your choice
•
1 1/2-2 cups beef stock
•
Optional: additional diced chiles of your choice
