Ingredients
- 3 Slices bacon (diced)
- 1/4 C Finely chopped yellow onion
- 1/4 C Finely chopped celery
- 1 Lb Can tomatoes (do not drain)
- 10 oz Package frozen whole baby okra (thaw only to separate pods, then slice into 1” rounds)
- 10 oz Package frozen whole kernel corn (do not thaw)
- 1 tsp Salt
- 1/8 tsp Pepper
- Pinch Powered saffron
- Pinch file’ powder
- 2 C Hot cooked rice
How To Make vegetable gumbo

Step 1Fry bacon in a large skillet over moderate heat 2 – 3 minutes; add onion and celery and sauté 8 – 10 minutes until golden. Add tomatoes and okra, cover and boil gently 3 – 4 minutes. Add corn, salt, pepper and saffron; recover and boil 3 - 4 minutes longer until okra is tender. Stir in file’ powder, ladle over rice and serve.
