5 cups rehydrated soy curls (rehydrate them in broth)
¼-1/2 cup BBQ sauce of choice
5 cups shredded lettuce
1½ cup black beans, drained & rinsed
1¼ cup corn, thawed or canned
1½ cup cherry or grape tomatoes, halved
½ red onion, diced
½ cup cilantro, finely chopped (optional)
1 lime, cut into wedges
Optional:1½ cups cooked rice of choice (brown, basmati, wild) or quinoa
optional dressing: vegan ranch,caesar, or other dressing of choice
