Vegan Buttery Soft Pretzels

INGREDIENTS
3 tablespoons white sugar ((sub maple syrup or agave if preferred))
2 1/4 teaspoon active dry yeast ((or 1 packet))
1 cup warm water ((think bath water temperature))
2 1/2 cups all-purpose flour
1 tablespoon melted vegan butter ((plus more for greasing the bowl))
4 cups hot water
1/4 cup baking soda
1 - 2 tablespoons rock salt
melted vegan butter
