"I was on a business trip in Scottsdale, Arizona and looking for a good place to eat. The trip was unexpected and so I hadn't prepped by selecting restaurants in advance so I was driving around. I finally gave up and stopped into a little Italian joint in a strip center expecting almost nothing of the meal except enough calories to keep me going until lunch the next day. Instead I had an extraordinarily good veal dish and discovered what became my favorite Italian restaurant in the world. (Larger image.) Serves 2...."

INGREDIENTS
2 veal scallopini (1/4 lb each)
1/4 cup flour
2 jars marinated artichoke hearts; quartered (about 1 cup)
2 Tbsp. olive oil
Salt and pepper
1/2 lemon; juiced
1/4 cup white vermouth*
Parsley; chopped
