For crust:
•
1/8 cup of white sugar
•
1/8 cup of brown sugar
•
1/4 tsp of lemon zest
•
1/8 tsp of salt
•
1/2 cup (115 g) of very cold unsalted butter, cubed
•
1 cup of all-purpose flour
•
For pear custard:
•
1 cup of pear puree (fully ripen)
•
2 large eggs
•
1/4 cup of honey
•
1/2 cup of white sugar
•
1/8 cup + 1 tbsp of lemon juice
•
Seeds from 1 vanilla bean
•
1/3 cup of all-purpose flour
•
Powder sugar for dusting
