INGREDIENTS
For the cake:
1 cup butter, softened
2 cups sugar
3 cups flour
4 eggs
5 teaspoons baking powder
1 teaspoon salt
1 cup coconut milk
Filling:
1 cup Greek yogurt
1/3 cup sugar
1/4 cup coconut milk
½ cup shredded coconut (unsweetened)
8 Minute Frosting:
This frosting is usually called 7 Minute Frosting, but the real key to success is the 1 minute of mixing before putting it on the stove.
1 ½ cups sugar
1/4 teaspoon cream of tartar
1/2 teaspoon salt
1/3 cup water (I just tried using coconut water and it was awesome)
2 egg whites
Garnish:
1 ½ cups unsweetened coconut flakes
