Would a route from Adelaide to Cairns be too ambitious? Only one way to find out! Of course every road trip needs portable, easy-to-eat yet delicious snacks to keep us fueled as we go. I came up with these Upside Down Under Cheesecakes as I was experimenting with another Aussie-inspired recipe. The mango in here is nod to the tropical fruit of the country but you could use your favourite cheesecake topping instead. Tuck these little babies into your caravan cooler and you're ready to hit the road with a tip of the hat and a g'day, mate!..."

1 cup fresh or frozen (thawed) diced mango
1 teaspoon lemon juice
3 tablespoons sugar
1 package (250g) Philadelphia Cream Cheese, softened
1/3 cup sugar
2 tablespoons heavy cream
1 teaspoon vanilla extract
1 large egg
1/2 cup graham crumbs
2 tablespoons packed brown sugar
2 tablespoons melted butter
8 125ml glass canning jars with lids
