1 pound ground lean beef
1 pound ground pork
1 cup freshly grated Parmesan
3/4 cup grated carrots
1/2 cup chopped parsley
1 cup breadcrumbs
3 garlic cloves, minced
3 eggs
Salt & pepper to taste
1/4 cup oil (for frying)
20-25 meatballs
1 jar (24-26 oz) marinara sauce
1 cup shredded cheddar cheese (I used Kraft finely shredded triple cheddar cheese)
