INGREDIENTS

For the Cake:

2 cups flour
•
2 cups granulated sugar
•
2 teaspoons baking powder
•
3 & 1/2 teaspoons baking soda
•
4 eggs
•
3 cups finely shredded carrot
•
3/4 cup mixed fried fruits (I used figs, apricots and cranberries) diced
•
2 teaspoons grated fresh ginger or 3/4 teaspoon ground ginger
•
1 cup finely chopped pecans, toasted
•
Frosting:
•
2 – 3 oz packages of cream cheese (no low fat or no fat – it really makes a difference)
•
1/2 cup butter (no margarine or butter substitute – it wont cream right)
•
1 tablespoon apricot brandy or orange juice (but seriously – go for the brandy – you’ll thank me later)
•
1/2 teaspoon orange peal
