½ lb. sliced pork belly

2 shiitake mushrooms

½ shimeji mushrooms

2 scallions

1 Tbsp. sesame oil

1 Tbsp. Chili Bean Paste (Doubanjiang)/Spicy Chili Bean Paste (La Doubanjiang )

1 package Katsuobushi (dried bonito flakes)
•
⅓ cup (100 ml) Mentsuyu (for homemade Mentsuyu recipe, click here)

1 cup (300 ml) water
•
1 tsp. miso (I use awase miso)
•
1 tsp. soy sauce
•
1½ Tbsp. rice vinegar
•
6 shrimps (+ 1 Tbsp. sake for boiling)

2 hard boiled eggs

A few slices of narutomaki

1 package nori
