1 1/2 pounds pork loin
1 medium onion, chopped
2 cups water
2 tablespoons vegetable oil
2 garlic cloves, minced
1 tablespoon all-purpose flour
1/2 cup ground dried mild red chile (not chili powder), preferably New Mexican
3/4 teaspoon salt
1/2 teaspoon dried oregano, preferably Mexican
Dough
6 cups masa harina (corn flour for tamales)
1 ²/³ cups vegetable oil or lard, or a combination
5 cups water, or more as needed
2 teaspoons salt
