Tourtière: Traditional Quebec Meat Pie • Adopted Tomato Kitchen

INGREDIENTS
2 lbs of ground pork
2 lbs of ground beef
1 cup of croissant crumbs 
1 cup of beef stock
1 medium yellow onion minced very fine. 
2 cups of peeled yellow potatoes diced into 1/2 inch dice. 
1 tsp cinnamon
1/2 tsp cloves 
1/4 tsp nutmeg 
1/4 tsp all spice
1 tsp dry mustard
1 tbsp Worcester sauce 
1/4 cup all purpose flour
1/4 cup cornstarch 
Salt and pepper to taste

1 egg
All-butter pastry dough for 2 9" pies with lids. 
Tools needed: 
2 x 9" pie plates
1 large deep frying pan
1 medium sized pot
1 strainer
1 ricer or potato masher
chefs knife
cutting board
measuring cups and spoons
tasting spoons
