INGREDIENTS
For the crust:3 cups (360g) all-purpose flour½ tsp salt1 cup or 2 sticks (226g) unsalted butter, cubed and cold7 to 8 tbsp ice-cold water
For the filling:1 large potato (about 300g), peeled and cut in large chunks1 tsp salt½ tbsp unsalted butter½ tbsp extra virgin olive oil1 large onion, peeled and diced4 garlic cloves, peeled and minced1/3 cup (50g) celery, diced1/3 cup (50g) carrot diced1
For the spice blend:1 ½ tsp salt1 tsp freshly ground black pepper½ tsp cinnamon½ tsp ginger powder¼ tsp grated nutmeg¼ tsp ground clove1 tsp Herbs de Provence
For the eggwash:1 egg1 tbsp (15ml) milk
