2/3 cup dried toor dal
2 cups water
1/4 teaspoon turmeric
1 lb (450 g) fresh spinach, trimmed and chopped
1 tablespoon ghee, butter or oil
3 dried whole red chilies
1 1/2-inch piece fresh ginger, minced or grated
1 teaspoon garam masala
1/2 teaspoon asafoetida
juice of 1/2 lemon (1 1/2 tablespoons)
1/2 teaspoon sea salt, or to taste
