Ingredients: 4 1/2 pounds plum tomatoes; 1/4 cup extra-virgin olive oil; 3/4 cup chopped garlic, (about 2 heads); 4 cups diced onions, (3-4 medium); 1 1/2 teaspoons salt; 1/4 cup tomato paste; 1 teaspoon dried oregano; 1/2 cup red wine2 tablespoons red-wine vinegar; 1/2 cup chopped fresh basil; freshly ground pepper, to taste
