Tiramatzu (Matzo Tiramisu)

INGREDIENTS
6 large egg yolks
½ cup plus 2 tablespoons (125g) granulated sugar
¼ cup plus 2 tablespoons Kahlúa or other coffee liqueur
1 teaspoon vanilla extract
1 teaspoon kosher salt
1½ cups heavy cream
1 cup mascarpone, at room temperature
1¼ cups hot coffee
6 sheets matzo
2 tablespoons unsweetened cocoa powder, for garnish
