FOR THE PUDDINGS:

1 1⁄2 cups fine dry bread crumbs

4 eggs, separated

3⁄4 cup superfine sugar

1 tsp. finely grated lemon zest

FOR THE MULLED WINE:

2 1⁄2 cups red wine

2⁄3 cup superfine sugar

Wide strips of zest and juice from 1 lemon
