This Old-School Chicken Pot Pie Is the Best We've Ever Had (By Far!)

INGREDIENTS
1 medium yellow onion
2 medium carrots
2 medium stalks celery
1 large leek
1 large clove garlic
8 sprigs fresh thyme, or 1 teaspoon dried thyme
6 tablespoons (3/4 stick) unsalted butter
1 1/2 teaspoons freshly ground black pepper, plus more for seasoning
1/3 cup all-purpose flour
2 cups low-sodium chicken broth
1/2 cup heavy cream
1 tablespoon Dijon mustard
2 1/2 cups shredded, cooked chicken (about 12 ounces)
1/2 cup frozen peas (do not thaw)
2 store-bought or homemade pie crusts (at least 1 pound total), thawed if frozen but still cold
All-purpose flour, for dusting
1 large egg
