This mini ravioli soup will warm you right up on a chilly day

INGREDIENTS
2 tablespoons olive oil, divided
1 pound Italian sausage, cut into coins
1 small onion, roughly chopped
2 ribs celery, roughly chopped
2 carrots, peeled and roughly chopped
4 cloves garlic, peeled
salt and freshly ground black pepper, to taste
8 cups beef stock
2 cups marinara sauce or crushed tomatoes
1 tablespoon Italian seasoning
fresh basil
1 (2-inch) piece Parmesan rind
8 ounces mini ravioli
freshly grated Parmesan, to serve
