INGREDIENTS
FOR THE PASTRY
200g (2 1/4 cups ) plain flour
pinch of salt
110g (4 oz)  butter, cubed or an equal mix of butter and lard
2-3 tablespoon cold water
1 beaten egg for glaze
FOR THE FILLING
25g (1/3 cup ) plain flour
700g (1 1/2lb/ ) braising or stewing steak cut into 2.5cm (1") cubes
250g ( 1/2 lb) kidney, cleaned and chopped into 2.5cm (1") cubes
25g (2 tablespoons) butter
1 tablespoon vegetable oil
2 large onions, thinly sliced
2 carrots chopped to 2.5cm (1")  cubes
850 ml (3 1/2 cups)  hot beef stock
