INGREDIENTS
For the carrot cake:
3 cups all-purpose flour
2 cups sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
4 large eggs
1 1/4 cups vegetable oil (or canola oil, grapeseed oil, etc.)
3/4 cups unsweetened, chunky applesauce
1 teaspoon vanilla extract
2 cups carrots, shredded (about 5 small carrots)
1 (15 ounces) can pineapple, drained and chopped
1 cup walnuts, chopped
For the cream cheese frosting:
1 cup unsalted butter, softened
1 cup cream cheese, softened
1 - 1 1/2 cups powdered sugar
1 cup walnuts, chopped
